Cordeillan Bages is a quaint, very elegant country restaurant owned by the proprietor of Chateau Lynch Bages, which is adjacent to the restaurant. The sophistication of the dining experience in the middle of Bordeaux vine country is a great surprise: CB is a Michelin 2 star restaurant, and everything it does it does well and with gravity. The service is among the best I've ever had (5 person service crew) and the dining room mixes urban elegance with country simplicity to make for an extremely comfortable place to eat: kind of like eating in the dining room of a wealthy person's summer cottage. The food is spectacular - and I'm generally not a fan of overwrought French cuisine - but this cuisine is well-informed away from typical French problems, allowing for diversity, dishes that are light and flavorful, and remarkably fun to eat. If you're a foodie and going to Bordeaux, CB is a must: the Michelin 2 star rating is well-earned. (9.5)
